Fresh Ginger from
Sayward Haven Farm
Locally grown in Cobble Hill, Vancouver Island
Harvest Day 2026
Hot off the press! Highlights from our Fresh Ginger harvest on October 8, 2026! Huge thanks to our friends Kevan & Karen for their help every year.
There is nothing quite like freshly harvested ginger. Tender, juicy and intensely fragrant, young ginger has thin skin, beautiful pink stems and a bright, fresh flavour...very different from the mature ginger commonly found in grocery stores.
We grow our ginger right here at Sayward Haven Farm and harvest it once a year in the fall.

Fresh ginger is only available once a year. You can get your fresh ginger THIS WEEKEND at the farm. We have 1/2 pound bags and sampler sized fresh ginger (Ginger Bites).

Why Fresh Ginger?
What Makes Fresh Ginger Different?
Fresh young ginger is harvested before the rhizomes develop the thick skin and fibrous texture of mature ginger.
It is:
-
Tender — the delicate, thin skin often needs no peeling
-
Juicy and aromatic
-
Less fibrous than mature ginger
-
Wonderful for cooking, baking, tea, preserves and freezing
-
Available only for a short time during our fall harvest

If you've only ever cooked with grocery-store ginger, fresh young ginger is worth trying.

What Do I Do With Fresh Ginger?
So Many Ways To Use It
Fresh ginger is incredibly versatile. Here are some examples:
-
Use it in curries, stir-fries, soups and sauces as you would cured ginger from the grocery store
-
Grate it into dressings and marinades
-
Bake with it (our favourite recipe is our popular Ginger cookies you can get at Gingerpalooza)
-
Make fresh ginger tea or syrup; pickle it
-
Freeze it to enjoy throughout the winter.
Fresh ginger freezes beautifully, so buying enough for several months is completely practical.
Simply place it in a freezer bag and throw it in the freezer. As fresh ginger does not have a hard skin, you can take it out and grate or cut what you need and put the rest back in the freezer.
Grown Here!
Grown Right Here In Cobble Hill
Our ginger begins months before harvest. We start it early and grow it through the summer here at Sayward Haven Farm using the same living-soil approach we use throughout the farm.
Every piece offered at Gingerpalooza is harvested right here.
